					<description><![CDATA[I’ve tried several of the top recipes that come up on Google for FMF bread in a Zojirushi, multiple times with multiple tweaks, trying to make them work, but I always wound up with a tasty, but ugly, sunken loaf. I tried Sue Becker’s recipe which always worked in my old Oster machine and the loaf still sunk, despite multiple attempts with different tweaks. I found this recipe that uses actual weights, followed it exactly as written, and have finally gotten a great loaf that didn’t sink. It slices great for sandwiches too. Have made it several times now, and haven’t had a fail yet. I’m wondering if my batch of grain has really high hydration and I needed a recipe that used actual weights, not just cups/teaspoons, etc… Regardless, thank you!]]></description>

Yes — warm water could definitely have caused the top to sink.

Since the Zojirushi on Mode 1 is already timed for proper rising, warmer water can make the yeast work too fast. The dough rises big and beautiful… then overproofs and collapses during baking.

Freshly milled flour (especially Kamut) also ferments a little faster, so that plus warm water can push it over the edge.

I’d try it again with true room temp or even slightly cool water and keep everything else the same.
