Guacamole Deviled Eggs (VIDEO)

Guacamole deviled eggs combine the creamy richness of avocado with the classic deviled egg for a delicious twist. It’s a unique and delicious variation on a classic appetizer, perfect for adding a fresh and flavorful touch to any gathering.

STEP BY STEP VIDEO GUIDE:

Ingredients for Guacamole Deviled Eggs:

  • 6 eggs
  • 1 avocado
  • Juice of 1 lime
  • 1 tsp finely chopped red onion
  • 1 tbsp chopped fresh cilantro
  • Salt and pepper to taste
  • Diced tomatoes for garnish
  • Smoked paprika for garnish

Instructions:

  1. Boil Eggs: Place eggs in a saucepan and cover with water. Bring to a boil, then remove from heat, cover, and let sit for 10-12 minutes. Cover boiled eggs with cold water and ice. Giving boiled eggs an ice water bath helps them peel easily. Peel and halve eggs lengthwise. Discard yolks from 4 eggs; reserve yolks from remaining 2 eggs.
  2. Make Guacamole: In a bowl, mash avocado with lime juice. Add the reserved 2 egg yolks and mash until smooth. Stir in chopped red onion, cilantro, salt, and pepper. Adjust seasoning to taste.
  3. Fill Eggs: Spoon guacamole mixture into egg white halves, evenly distributing.
  4. Garnish: Top each filled egg with diced tomatoes and a sprinkle of smoked paprika.
  5. Serve: Arrange on a platter and serve immediately, or refrigerate until ready to serve.

TIPS:

  • Choose ripe avocados for easier mashing and better flavor.
  • Adjust lime juice, salt, and pepper according to your taste preference.
  • Garnish just before serving to keep the tomatoes fresh and paprika flavorful.

How to Store Guacamole Deviled Eggs:

Cover and Refrigerate: Place the deviled eggs in an airtight container. Cover each egg with plastic wrap to minimize air exposure and prevent the guacamole from browning.

Chill: Store in the refrigerator for up to 2 days.

Add Extra Lime: Squeeze a bit of extra lime juice on the guacamole to help preserve its color.

Garnish Later: If possible, wait to add garnishes like tomatoes and paprika until just before serving to keep them fresh and vibrant.
