WHAT IS SHAKSHUKA?
Shakshuka is a beloved dish from the Middle East and North Africa, featuring poached eggs simmered in a robust, spiced tomato stew. Typically garnished with fresh herbs, it’s often accompanied by bread for dipping. This hearty and flavorful meal is versatile enough to be enjoyed at breakfast, lunch, or dinner.

- 2 Tbsp Olive Oil
- 1 Yellow onion, finely chopped
- 1 Clove garlic, minced
- 1 tsp ground cumin
- Salt and pepper to taste
- 1 lb cherry tomatoes, halved
- 6-8 eggs
- Herbs for garnish (chives and basil)
- 1 Avocado for topping
INSTRUCTIONS HOW TO MAKE SHAKSHUKA:
- Preheat the oven to 400°F.
- Prepare the ingredients: chop the onion, peel the garlic clove, halve the tomatoes, season tomatoes with salt and pepper, and chop the basil.
- Heat oil in a large oven-safe skillet over medium heat.
- Add the onion and sauté until golden brown and tender, about 8 minutes.
- Stir in the garlic and cumin, and cook for 1 minute.
- Add the tomatoes and sauté for 1 minute.
- Transfer the skillet to the oven and roast for 10 minutes.
- Remove from the oven, stir, and make small wells in the vegetable mixture. Crack 1 egg into each well.
- Bake until eggs reach desired doneness, about 7-8 minutes.
- Sprinkle with chopped basil and chives, and top with avocado slices.
- Serve and enjoy.
