<li>1 lb medium uncooked shrimp, peeled &amp; deveined</li>



<li>2 teaspoons olive oil</li>

<li>Whisk honey, soy sauce, garlic, and ginger (if using) in a medium bowl. Set aside half for cooking and use the rest to marinate the shrimp.</li>

<li>Place shrimp in a bowl, pour half the marinade over, and refrigerate for 15 minutes (or up to 8-12 hours).</li>



<li>Heat olive oil in a skillet over medium-high heat. Add shrimp and cook for about  2-3 minutes on one side until pink. Flip the shrimp, add the remaining marinade, and cook for 2- 3 more minutes until fully cooked.</li>



<li>Serve with extra sauce and garnish with green onion and/or sesame seeds. Great with brown rice and steamed veggies.</li>
