- 1 romaine lettuce, chopped
- 1/2 cup red cherry tomatoes halved
- 1/2 cup yellow cherry tomatoes halved
- 2 small cucumbers chopped
- 1 cup carrots chopped
- 1 tsp chives chopped
- 1 tbsp parsley chopped
Combine all the chopped vegetables in a large bowl. Gently toss to mix them.
Prepare the dressing: combine the cider vinegar, olive oil, dijon mustard, and lemon in a jar. Shake it well .
Pour dressing over the salad and toss well.
