Easy Cottage Bagels with Freshly Milled Flour

Ingredients
  

  • 2 cups freshly milled whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup cottage cheese
  • 1 egg

  • Everything bagel seasoning

Instructions
 

  • Preheat oven to 375°F and line a baking sheet with parchment paper.
  • Mill about 1⅓–1½ cups hard white wheat berries to make 2 cups flour.
  • Blend 1 cup cottage cheese until smooth if desired, then add 1 egg and mix well.
  • Mix 2 cups flour, 2 tsp baking powder, and ½ tsp salt.
  • Combine wet and dry ingredients to form a dough.
  • Knead lightly, divide into 4–8 pieces, and shape into bagels.
  • Brush the tops with egg wash and add toppings if desired.
  • Bake 22–28 minutes until golden brown.
  • Cool slightly and serve.
