- 2 cups freshly milled whole wheat flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup cottage cheese
- 1 egg

Preheat oven to 375°F and line a baking sheet with parchment paper.
Mill about 1⅓–1½ cups hard white wheat berries to make 2 cups flour.
Blend 1 cup cottage cheese until smooth if desired, then add 1 egg and mix well.
Mix 2 cups flour, 2 tsp baking powder, and ½ tsp salt.
Combine wet and dry ingredients to form a dough.
Knead lightly, divide into 4–8 pieces, and shape into bagels.
Brush the tops with egg wash and add toppings if desired.
Bake 22–28 minutes until golden brown.
Cool slightly and serve.
