- 2 large eggs
- 4 slices of bacon
- 1/2 cup mushrooms sliced
- 1/2 cup spinach
- 5-6 cherry tomatoes halved
- 1/2 avocado sliced
- Salt and pepper to taste
- 1 tablespoon ghee for sautéing
Cook the Bacon
Preheat the air fryer to 350°F (175°C).
Place bacon slices in the air fryer basket in a single layer.
Cook for 7 minutes, or until crispy. Adjust time for desired doneness.
Sauté the Vegetables
Heat a non-stick skillet over medium heat and add ghee.
Add the mushrooms and cook for 2-3 minutes until softened.
Add the spinach and cherry tomatoes, cooking just until the spinach wilts and the tomatoes soften slightly.
Season with salt and pepper and move the vegetables to one side of the pan.
Fry the Eggs
In the same skillet, crack the eggs into the open space.
Cook until the whites are set and yolks reach your desired consistency.
Assemble the Plate
Arrange the eggs, bacon, sautéed mushrooms, spinach, and cherry tomatoes on a plate.
Add half of the sliced avocado.
