Ingredients
  

  • 2 large eggs
  • 4 slices of bacon
  • 1/2 cup mushrooms sliced
  • 1/2 cup spinach
  • 5-6 cherry tomatoes halved
  • 1/2 avocado sliced
  • Salt and pepper to taste
  • 1 tablespoon ghee for sautéing

Instructions
 

Cook the Bacon

  • Preheat the air fryer to 350°F (175°C).
  • Place bacon slices in the air fryer basket in a single layer.
  • Cook for 7 minutes, or until crispy. Adjust time for desired doneness.

Sauté the Vegetables

  • Heat a non-stick skillet over medium heat and add ghee.
  • Add the mushrooms and cook for 2-3 minutes until softened.
  • Add the spinach and cherry tomatoes, cooking just until the spinach wilts and the tomatoes soften slightly.
  • Season with salt and pepper and move the vegetables to one side of the pan.

Fry the Eggs

  • In the same skillet, crack the eggs into the open space.
  • Cook until the whites are set and yolks reach your desired consistency.

Assemble the Plate

  • Arrange the eggs, bacon, sautéed mushrooms, spinach, and cherry tomatoes on a plate.
  • Add half of the sliced avocado.
