Ingredients
  

  • 2 cups freshly milled whole wheat flour we use hard white wheat
  • 2 tbsp sugar or honey/maple syrup
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • 1¾ –2 cups milk start with 1¾, add more if batter is thick
  • ⅓ cup melted butter or oil
  • 1 tsp vanilla extract

Instructions
 

  • Mill the grain.Using hard white wheat berries, mill about 1⅓ cups of wheat berries to yield approximately 2 cups of freshly milled flour.
  • Mix dry ingredients. In a bowl, whisk together 2 cups freshly milled wheat flour (Hard white wheat), 2 tbsp sugar, 1 tbsp baking powder, and ½ tsp salt.
  • Mix wet ingredients. In another bowl, beat 2 eggs, then whisk in 1¾ cups milk, ⅓ cup melted butter or oil, and 1 tsp vanilla.
  • Combine. Pour the wet ingredients into the dry ingredients and stir just until combined. Let the batter rest for 5–10 minutes. Freshly milled flour thickens as it sits, so add up to ¼ cup more milk if needed.
  • Cook.Lightly grease the waffle iron. Pour in the batter and cook until the waffles are golden and crisp.
  • Serve. Serve warm with fresh berries, chopped nuts, maple syrup, and whipped cream.
