Prepare Ricotta Mixture: In a food processor or blender, combine the ricotta cheese, olive oil, lemon juice, and sea salt.
Blend Until Smooth: Blend the mixture on high speed for 1–2 minutes until it's smooth and creamy, stopping to scrape down the sides as needed.
Taste and Adjust Seasoning: Taste the whipped ricotta and adjust the seasoning with more salt or lemon juice if desired.
Transfer to Serving Dish: Spoon the whipped ricotta into a serving bowl, spreading it evenly.
Garnish: Drizzle honey over the top of the ricotta. Sprinkle with roasted pine nuts, lemon zest, fresh thyme leaves, and flaky sea salt.
