Rinse the cauliflower head thoroughly and pat it dry with a paper towel. Remove the outer leaves of the cauliflower
Place the cauliflower on a cutting board. Using a sharp knife, carefully slice the cauliflower vertically into 1-inch thick "steaks."
Arrange the cauliflower steaks and any loose florets on the prepared baking sheet.
Drizzle olive oil over the cauliflower steaks, using a basting brush or spoon to evenly coat both sides. Season with salt and black pepper according to your taste.
Place the baking sheet in the preheated oven and roast the cauliflower for 20-25 minutes, flipping the steaks halfway through the cooking time. Roast until the cauliflower is tender and golden brown on the edges.
Once done, remove the baking sheet from the oven. Carefully transfer the roasted cauliflower steaks to a serving platter.
Garnish with a sprinkle of fresh herbs like parsley or thyme if desired. Serve hot as a side dish or as a main course with your favorite sauces or accompaniments.
