Greek Pasta Salad with Feta and Veggies

Ingredients
  

  • 8 ounces pasta
  • 2 persian cucumbers chopped
  • 1 cup cherry tomatoes halved
  • 1 green bell pepper chopped
  • 1/2 red onion chopped
  • 1/2 cup olives pitted and halved
  • 1/2 cup crumbled feta cheese

Dressing

  • 2 tablespoons olive oil
  • juice of 1 lemon
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Cook pasta according to package instructions. Drain and rinse with cold water.
  • In a large bowl, whisk together 2 tablespoons olive oil, the juice of 1 lemon, 1 teaspoon dried oregano, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper.
  • Add 8 ounces cooked and cooled pasta to the bowl.
  • Stir in 2 chopped Persian cucumbers
  • 1/2 chopped red onion
  • 1/2 cup olives
  • 1 cup halved cherry tomatoes
  • 1 chopped green bell pepper
  • Toss everything together until evenly coated with the dressing.
  • Taste and adjust seasoning if needed.
  • Top with 1/2 cup crumbled feta cheese.
