- 8 ounces pasta
- 2 persian cucumbers chopped
- 1 cup cherry tomatoes halved
- 1 green bell pepper chopped
- 1/2 red onion chopped
- 1/2 cup olives pitted and halved
- 1/2 cup crumbled feta cheese
Dressing
- 2 tablespoons olive oil
- juice of 1 lemon
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
Cook pasta according to package instructions. Drain and rinse with cold water.
In a large bowl, whisk together 2 tablespoons olive oil, the juice of 1 lemon, 1 teaspoon dried oregano, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper.
Add 8 ounces cooked and cooled pasta to the bowl.
Stir in 2 chopped Persian cucumbers
1/2 chopped red onion
1/2 cup olives
1 cup halved cherry tomatoes
1 chopped green bell pepper
Toss everything together until evenly coated with the dressing.
Taste and adjust seasoning if needed.
Top with 1/2 cup crumbled feta cheese.
