- 6 eggs
- 1 avocado
- Juice of 1 lime
- 1 tsp finely chopped red onion
- 1 tbsp chopped fresh cilantro
- Salt and pepper to taste
- Diced tomatoes for garnish
- Smoked paprika for garnish
Boil Eggs:
Place 6 eggs in a saucepan and cover with water.
Bring to a boil, then remove from heat. Cover, and let sit for 10-12 minutes
Cover boiled eggs with cold water and ice. Giving boiled eggs an ice water bath helps them peel easily.
Peel and halve eggs lengthwise.
Discard yolks from 4 eggs; reserve yolks from remaining 2 eggs.
Make Guacamole:
In a bowl, mash avocado with lime juice.
Add the reserved 2 egg yolks and mash until smooth.
Stir in chopped 1 tsp red onion and 1 tbsp cilantro
Season with salt, and pepper.
