Ingredients
  

  • 6 eggs
  • 1 avocado
  • Juice of 1 lime
  • 1 tsp finely chopped red onion
  • 1 tbsp chopped fresh cilantro
  • Salt and pepper to taste
  • Diced tomatoes for garnish
  • Smoked paprika for garnish

Instructions
 

Boil Eggs:

  • Place 6 eggs in a saucepan and cover with water.
  • Bring to a boil, then remove from heat. Cover, and let sit for 10-12 minutes
  • Cover boiled eggs with cold water and ice. Giving boiled eggs an ice water bath helps them peel easily.
  • Peel and halve eggs lengthwise.
  • Discard yolks from 4 eggs; reserve yolks from remaining 2 eggs.

Make Guacamole:

  • In a bowl, mash avocado with lime juice.
  • Add the reserved 2 egg yolks and mash until smooth.
  • Stir in chopped 1 tsp red onion and 1 tbsp cilantro
  • Season with salt, and pepper.

Fill Eggs:

  • Spoon guacamole mixture into egg white halves, evenly distributing.

Garnish:

  • Top each filled egg with diced tomatoes and cilantro.
  • Sprinkle of smoked paprika.

Serve:

  • Arrange on a platter and serve immediately, or refrigerate until ready to serve.
