Ingredients
  

  • 1/3 cup honey
  • 1/4 cup soy sauce use reduced sodium if preferred
  • 2 garlic cloves minced (or 1 teaspoon jarred minced garlic)
  • Optional: 1 teaspoon minced fresh ginger
  • 1 lb medium uncooked shrimp peeled & deveined
  • 2 teaspoons olive oil
  • Optional: chopped green onion and sesame seeds for garnish

Instructions
 

  • Whisk honey, soy sauce, garlic, and ginger (if using) in a medium bowl. Set aside half for cooking and use the rest to marinate the shrimp.
  • Place shrimp in a sealable container or bag, pour half the marinade over, and refrigerate for 15 minutes (or up to 8-12 hours).
  • Heat olive oil in a skillet over medium-high heat. Add shrimp and cook for about 45 seconds on one side until pink. Flip the shrimp, add the remaining marinade, and cook for 1-2 more minutes until fully cooked.
  • Serve with extra sauce and garnish with green onion. Great with brown rice and steamed veggies.
