Waffles with Freshly Milled Flour 🌾

I started making these waffles with freshly milled flour as an easy way to use more of the flour I mill at home. Freshly milled whole grains provide more of the grain’s natural fiber, vitamins, minerals, and healthy fats than refined flour. These waffles are light and fluffy inside, slightly crisp outside, and full of delicious, nutty flavor—making them a wholesome and easy family breakfast.

When we feel like having something sweet for breakfast, these waffles with freshly milled flour are always popular in our house.

We also like making banana bread with chocolate chips and cinnamon rolls. I usually make these ahead of time, so we can enjoy them fresh or just take them out of the freezer and warm them up in the morning. It’s nice to have something homemade in the freezer that makes breakfast quick and easy to prepare.

Why Freshly Milled Flour?

Once you understand the difference between freshly milled whole-grain flour and typical store-bought refined flour, you may look at your homemade waffles in a whole new way. These waffles are not only delicious—they are made with the goodness of the whole grain, including parts of the wheat berry that are often removed during refining.

And the best part? They’re easy and quick to make! All you need is a grain mill, wheat berries, and a few simple ingredients.

  • Whole grain goodness: Keeps the bran, germ, and endosperm, providing fiber, vitamins, minerals, and healthy fats.
  • Fresh and flavorful: Freshly milled flour adds a naturally sweet, nutty flavor.
  • Simple ingredients: You know exactly what goes into your waffles.
  • Easy breakfast: Once the flour is milled, the batter comes together quickly.
  • A delicious way to eat more whole grains: Wholesome, homemade, and family-friendly.

INGREDIENTS

  • 2 cups freshly milled whole wheat flour (we use hard white wheat)
  • 2 tbsp sugar (or honey/maple syrup)
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • 1¾–2 cups milk (start with 1¾, add more if batter is thick)
  • ⅓ cup melted butter or oil
  • 1 tsp vanilla extract

INSTRUCTIONS

Preheat waffle iron
Get it nice and hot—this helps the waffles turn crisp on the outside.

  1. Mill the grain
    Using hard white wheat berries, mill about 1⅓ cups of wheat berries to yield approximately 2 cups of freshly milled flour.
  2. Mix dry ingredients
    In a bowl, whisk together 2 cups freshly milled wheat flour (Hard white wheat), 2 tbsp sugar, 1 tbsp baking powder, and ½ tsp salt.
  3. Mix wet ingredients
    In another bowl, beat 2 eggs, then whisk in 1¾ cups milk, ⅓ cup melted butter or oil, and 1 tsp vanilla.
  4. Combine
    Pour the wet ingredients into the dry ingredients and stir just until combined. Let the batter rest for 5–10 minutes. Freshly milled flour thickens as it sits, so add up to ¼ cup more milk if needed.
  5. Cook
    Lightly grease the waffle iron. Pour in the batter and cook until the waffles are golden and crisp.
  6. Serve
    Serve warm with fresh berries, chopped nuts, maple syrup, and whipped cream.

Note: To make 2 cups of freshly milled flour, mill approximately 1⅓ cups of hard white wheat berries.

Why We Choose Hard White Wheat

  • Hard white wheat has a mild, slightly sweet flavor and provides enough structure to give the waffles a light texture while helping them hold their shape.
  • Soft white wheat has a similarly mild flavor, but it contains less gluten-forming protein, which creates a softer, more delicate texture and can make waffles less sturdy.
  • Hard red wheat provides good structure because it is also a hard wheat, but it has a stronger, nuttier flavor and darker color that can be more noticeable in waffles.
  • Einkorn has a naturally delicate texture and a slightly nutty flavor. It can make delicious waffles, but the dough tends to have less structure than waffles made with hard white wheat.
  • Kamut (Khorasan wheat) has a rich, slightly sweet flavor and good structure, but it produces a denser, chewier texture than hard white wheat.

We choose hard white wheat because it gives us the best balance of structure, light texture, and mild flavor for these waffles.

How Much Does It Cost to Make Waffles with Freshly Milled Flour?

Have you ever wondered how much it actually costs to make waffles from scratch?

I did the math for these freshly milled whole wheat waffles, and I was pleasantly surprised. They are not only delicious and made with wholesome ingredients, but they are also very affordable to make at home.

I use hard white wheat berries from Grand Teton Ancient Grains and mill them fresh right before making the waffles. I buy 48 pounds of wheat berries for $80, which makes the wheat for this recipe only about $0.76.

About $3.50 for a Batch of Homemade Waffles!

This recipe makes approximately 5 large waffles, depending on the size and shape of your waffle maker.

That means each waffle costs only about 68 cents to make, including organic eggs and freshly milled whole wheat flour.

I love that the flour itself is such a small part of the cost. For less than a dollar, I can mill my own whole wheat flour fresh for the recipe instead of buying a bag of flour.

And the best part? These waffles aren’t complicated. You simply mill your wheat, mix the ingredients, and cook the waffles.

For me, the biggest benefit is knowing exactly what I’m putting into our food. I love starting with whole wheat berries, milling them fresh, and turning them into something my family genuinely enjoys.

  • Milling the whole berry yourself means you are using the whole grain rather than removing the bran and germ, as happens when making refined white flour

🍁 Maple syrup, sugar, or honey

  • Maple syrup and honey contain small amounts of minerals and plant compounds, but they should still be considered added sugars

🌿 Vanilla

  • Used in a small amount, so it contributes very little nutritionally, but it adds flavor without needing a large amount of sugar.
